As as side note, among all the variants
Respectable Hobbits is the one that I created almost as a joke. It's amusing to see how it actually is the most appreciated
EDIT: some changes in the first post about
Standards of Living.

I've thought of a concept for Beornings - Aren't there some Mountain folk that don't mix with the other Beornings much. (I'm fairly sure I remember reading that somewhere in one of the books.... can't remember which one).
Seems a shame for the Beornings to be left out
I like the idea by the way.
Gives a quick way to give more options for variant characters. I suggest tinkering a little further and getting more feedback and then asking Rich to make up a lovely Pdf for you. (Would complement my additional background quite well I reckon).

BIG UPDATE TO THE FIRST POST!
Check it out in the first page of the topic. Added corrections and a standard format for all variants, changed the Rebel Elves to the more correct
Wayward Elves and dabbled with the rules a bit more
poosticks7, your wish has been granted: check out the new
Mountain-men in the first page!
Soon or late, I'm also going to post rules to play the
River-folk of the Anduin (the
èafolc) and the
Erringmen, both described in The Heart of the Wild. Stay tuned for updates and like always, comments and suggestions are gladly accepted!

Just out of curiosity: why do Mountain-men have 3 ranks in Riddle and just 1 in Awe?

Their description is taken directly from The Heart of the Wild, page 32:
They serve Beorn, but remain suspicious and private even when among fellow Beornings.
During interactions, Riddle is used to conceal identities and purposes, while Awe is used to boast and impress. It seemed almost natural to swap the starting Beorning scores in those two skills to make a wary and private variation of them.

I'd say that, for Bree Hobbits, we should wait to see what Men of Bree are like statistically, then aim for something a bit like that. That involves waiting a while, but still seems a good call.
