Actually, there are tons of ideas . Take a second look at Otaku's post.
In addition, you have the Barrow-downs, Old Man Willow, Ruffians, the Ringwraith's search for The One Ring (hey, that's a cool name for a game ), Moria, plots afoot in Angmar, you name it. There's easily enough for a book.

Are most of the places (Grey Heavens, Barrowdowns, Ettenmoor,etc) not mentioned only in passing or are given only the barest of discriptions in the hobbit or LotRs? I suppose you could have one supplement containing all these places, but not a single supplement for each.

The "Beorn's Quest" portion of Darkening of Mirkwood utilizes something that, afaik certainly only ever appeared in The Silmarillion. (and yes, I'm trying to be vague enough to avoid spoilers.)

Yes, I would imagine that there should be one book to cover most of Eriador (Adventures in Eriador might be a good title). The problem with the lands traveled by Aragorn that lie beyond the borders of north-western Middle-earth is that there is even less published about them than there is about Eriador. A lot of imagination would have to go into depicting Umbar, Near and Far Harad, Khand and Rhun. The (Southern) Grey Mountains, the Yellow Mountains, the Mountains of the East, and the Mountains of the Wind come from sources such as HOME IV: The Shaping of Middle-earth and The SIlmarillion. Aragorn must have traveled at least as far as the Girdle of Arda (the Equator) and probably further; but it's anyone's guess as to whether he ever looked out over the East Sea or the Inner Seas. Only a handful of regions in the East and South are even named. Yes, I am making liberal use here of Karen Wynn Fonstad's The Atlas of Middle-earth (among other sources).

I have a sneaking suspicion that the Rivendell book is gonna cover more than just Imladris. Even with two entirely new cultures, there's still a lot of paper to fill in that book ya know? I bet we'll get Trollshaws at the very least. Is there a rough date for the rivindell material? Or is it simply a 'coming when it's done' thing?

"When it's done" was the last "update" I heard for Rivendell.

Well, Rivendell is actually listed in game distributor's inventory systems as of last week, complete with product code. So that may mean something.
But then again, DoM and HotW were listed WAY before they actually released. *shrug*
