(It probably doesn't matter anyways because as a Loremaster I might not care what the primary attack is and attack with what I think is appropriate for the game at the moment.
It does seem to be an implied rule that the first attack type is the main form. However, this game (as you allude to, indirectly) is about common sense rulings rather than absolute rules, so if something else makes better sense to you, I say go for it.
Immediate Sting after Ensnare? I don't see anywhere that mentions Attercops getting 2 attacks in one round.
In the revised edition of the rules, there's still an asterisk next to Ensnare. In the slipcase edition, there was a note attached to that asterisk, indicating that the spider could Sting immediately if the spider had a Great or Extraordinary success. I don't think we've ever had clarity on whether this was an unintentional omission or a intentional decision.
If you want to replace it, I'd add
Savage Assault to the Attercops and raise their Hate by one or two points.
What does Ensnare have to do with Great Leap? The example talks about using Great Leap but the description of this Special Ability is that it "replaces their normal attack".
A Great Leap attack is still an attack, just at a hero that the adversary couldn't normally engage. So the spider still needs to roll for Ensnare, after performing the Great Leap.
