Actually, Tolkien wrote that Gimli wanted to accompany his father on the Quest of Erebor, but he was judged to be too young (or too immature? irresponsible?) at the time. That would definitely place him in the Ered Luin.

That's covered in the text of "The Quest of Erebor" found in Unfinished Tales.
