Pick locks & Pick pockets
Which skill(s) is most appropriate to pick up a lock and to pick pockets? and Disarm a trap? For this last one may be craft.

Re: Pick locks & Pick pockets
p 97 AB
Burglary is obviously the best option as the very description of the speciality suggests:
This venerable talent includes pickpocketing, lock
picking and, in general, any shadowy way to get hold
of the possessions of others or access protected areas.
p 21 LMB
Picking a Stone-troll’s pockets or stealing something from
the hoard of a sleeping Dragon without leaving a trace
are good examples of Epic feats.
The textual description of the skills suggest that Stealth might be a possible choice or Craft for lock picking.
I might, depending upon the specific task, decide it's an Epic task using Stealth to pick someone's pocket. Or if it doesn't qualify for Epic in plot terms. I might make it a simple TN 16 or 18 task.

Re: Pick locks & Pick pockets
What I would use (please note that I am quite fond of two-roll tests ):
Pickpocket - I would say Awareness to choose the right moment, and then Stealth to do the lifting itself
Picking a lock - for a simple lock - Craft. For a complex dwarf-made lock, an Insight roll first to determine the mechanics, and then the Craft to break it.
Disarm a trap - Search first, and then either Hunting or Craft roll, depending on the type of the trap
Some of these could be automatic if the burglar has the Burglary trait.

The Typical Tasks table on p. 149 of the Adventurer's Guide also helps.

So, craft for lock picking...it makes sense.
