Does the printed sheet cut off the last inch of the page even when it doesn't look so in the print preview?

I use Chrome. Print preview cuts off the last inch of each page as well.

I tried it with Firefox and IE as well, both of which cut off the last inch in print preview.

What happens when you select Margins=None or Minimum in the print preview? Does it still cut off a part?

Good call. Minimum still has some cut off, but no margins seems to fix it. Also in Firefox and IE you can scale it down to fit.

The current design of the sheet (I mean, the one you all can currently use) uses some nasty absolute widths in pixels, and it is not responsive at all. In the new one that I have almost done, the sheet will adapt itself to the size limits, and so it should fit better when printing.
There are still some challenges that make it hard to make the sheet always fit. For example, you can add more rows to the Weapon Skills, Weapon Gear and Gear listings. That makes the sheet grow vertically, and there is only so much I can do to mitigate that.
Unless any of you have a happy idea for that case, I think we will need to deal with that.

Would it be helpful if I posted a pic of a printed character sheet so that you can see one? There are some alignment issues taking place that make it look messy. It looks fine on the server, but it just doesn't translate to print very well. Actually, in my opinion, there are some alignment issues on the server too, but that is my preference. I like numbers to be centered perfectly in circles, etc.

This might not be possible, but is there any way the character sheet could be modular? You might be able to go into edit mode, and resize different bits and drag the different bits to put them where you want? That might be too difficult.
But as far as the adding too many weapons thing, I think the vast majority of characters will be carrying 4 or less weapons (one-handed weapon, two-handed weapon, ranged weapon, dagger). I can't really see a reason to carry more and overburden your character with fatigue. You could make it so it fits 4 or even 5 weapons easily, and if someone goes crazy and has more than that, they'll just have to suffer with an extra page.

It's not a matter of how many weapons the character carries, but how many they actually possess. There is those little check-boxes to the left of each entry, those let you mark if the item is being carried (so it's encumbrance value contributes to the total encombrance) or not.
I have an ongoing campaign and my players do have lots of weapons and gear, some of them reward-enhanced, even when they don't carry them with them everywhere.
Yes, it would help. And yes, I am aware of the not well centered numbers. I have tried to fix that for the next version, though.
