It seems clear to me... a Company has the patron, though individual members of the Company may take the Undertaking, if for some reason they want a one-on-one meeting, or some such. At least, that's my interpretation.

Nothing too game breaking but they give the PCs some mechanics/advantages to hang things off and get ideas from.

Doesn't seem to be rules for Elrond, Galadriel, or Aragorn as Patrons yet.
Bilbo could even be a Patron in the Shire. (and he's the only Hobbit who qualifies)
King Dain might provide different things then Gloin.
