I would be looking at a campaign that shifts the focus from the Anduin Vales to Eastern Rhovanion. It would focus on the 30 year period after the death of King Bard and the crowning of King Bain. The main arc would obviously be the trials and tribulations of expanding the boundaries of Dale as Far East as the Redwater and along the Celduin as far as the settlement of Riverstead.
The campaign would then finish as King Brand is crowned. Unlike the other campaigns, this one might be aiming for a more upbeat and optimistic finale.

The problem is that the population of that area isn't as well developed as I'd hoped in EtLM. It's probably my only complaint about that book. It still seems to me that the bulk of those who fled Smaug's attack on Laketown would have gone east to the Iron Hills and on into the Redwater Valley, or journeyed down the River Running. The politicking and feuding of these ex pat Lords would have presented countless opportunities in a campaign to reunite a 'greater' Kingdom of Dale.

Other adventures would involve the Dwarves of the Iron Hills and a look at Rhovanion proper, one of the last unexpedited parts of the original game maps.

I personally would love a poster sized map of all of Middle-earth (as portrayed in the Lord of the Rings books) both in a player's and LM's form. I know probably 80+% of that is covered in J&M, but to have One Map to rule them all...that would be precious!

I hope it's made of a good quality material. I bought something similar made out of silk material - didn't last long when used as a game night item.
